Ground Beef Taco Salad [recipe]

Ingredients:

For the Ground Beef:

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup water
  • 1 (15-ounce) can black beans, drained and rinsed (optional)

For the Salad:

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup corn kernels (fresh, canned, or frozen, thawed)
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro (optional)
  • Tortilla chips, crushed (optional, for serving)
  • Lime wedges, for serving

For the Dressing:

  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

  1. Cook the Ground Beef:
    • Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, sauté until softened and fragrant, about 2-3 minutes.
    • Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.
    • Stir in chili powder, ground cumin, paprika, salt, and pepper. Cook for another minute to toast the spices.
    • If using black beans, add them to the skillet along with 1/4 cup of water. Stir to combine and simmer for 2-3 minutes until heated through. Remove from heat and set aside.

    • In a small bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper until smooth. Set aside.

    • In a large salad bowl, combine chopped romaine lettuce, halved cherry tomatoes, shredded cheddar cheese, corn kernels, diced avocado, and chopped cilantro (if using). Toss to combine.

  5. Drizzle with Dressing:
    • Drizzle the prepared dressing over the salad.
